The New Nordic?

The Twin Cities have been buzzing with press about “New Nordic” cuisine featured at venues like The Bachelor Farmer, and Fika, and dill, herring and other Scandinavian ingredients are noticeable on menus around town. But what is New Nordic cuisine, and how does it relate to Minnesota’s long and rich Scandinavian heritage? Food blogger Patrice Johnson elaborates on the origins of this trend, while Michael Fitzgerald of Fika and Chad Snelson of the American Swedish Institute discuss the restaurant’s concept & menu, and share samples.
